Ingredients

8 large eggs
1/2 cup Maola Whole Milk
1 teaspoon salt, to taste
1 teaspoon ground black pepper
1 teaspoon thyme
1 teaspoon sage, finely chopped
1 cup crumbled feta cheese
1 tablespoon vegetable oil
2 1/2 cups (1 bag)  thin asparagus , trimmed and cut on a diagonal into 1‑inch pieces
1/2 small zucchini
1 beefsteak tomato chopped
1 cup shredded mozzarella cheese

Instructions

  1. Preheat the oven to 400°F.
  2. Chop the asparagus, tomato and zucchini; set aside.
  3. Whisk the eggs, salt, pepper, and herbs in a large bowl. Stir in the mozzarella and feta cheese; Add the Maola Whole Milk last. Set aside.
  4. Heat the oil over medium‑high heat in a skillet. When the oil is hot, add the asparagus and cook, stirring occasionally, for 5 minutes or until lightly browned. Add the zucchini and tomatoes and cook for 2 minutes more.
  5. Pour the egg mixture over the vegetables, ensuring vegetables and egg mixture are incorporated fully. Cook for 4 to 5 minutes.
  6. When the mixture is no longer liquid (when the eggs have just begun to set), transfer the mixture to a muffin tin. Bake for 8 to 10 minutes or until the top is golden. Sprinkle with more mozzarella, if desired.
  7. Serve immediately or pack away for meal prep.
